3 scallions, white and light green parts, thinly sliced
2 tablespoons fresh thyme leaves
2 tablespoons fresh chopped mint leaves
2 garlic cloves
2 teaspoons salt
zest of 1 lemon
juice of ½ lemon
¼ cup olive oil
2½ pounds boneless steak (ribeye, NY or skirt)
Instructions
In a blender or food processor, combine basil, scallions, thyme, mint, garlic, salt, lemon zest, and lemon juice. Pour in the olive oil and blend into a paste.
Pat the steak dry with paper towels and place in a large bowl or baking dish. Slather marinade all over meat, cover the bowl and refrigerate for at least 30 minutes and no longer than 12 hours.
When ready to cook, heat a grill or broiler to high.
Grull or broil the meat until it is nicely browned on both sides and pink in the middle, about 4-5 minutes each side. Transfer to a cutting board and let rest for 10 minutes.
Slice steak widthwise and serve immediately.
