Turkey Slopping Joes

Serves: 4
- 1 Tbsp olive oil
- ½ cup minced carrots, about 2 carrots
- 1 cup finely chopped onion (about 1 medium onion)
- ½ cup finely chopped celery, about 2 stalks
- 2 cloves garlic, minced
- ½ teaspoon salt
- fresh ground pepper
- 1¼ lb ground turkey
- ½ cup ketchup
- 1-15 ounce can tomato puree
- 1 Tbsp Worcestershire sauce
- 1 Tbsp red wine vinegar
- 2 Tbsp brown sugar
- ½ teaspoon dried thyme
- 4 hamburger buns
- Heat oil in a large cast iron skillet over medium heat.
- Add the onions, carrots, and celery and saute until soft, about 6 minutes.
- Add the garlic, salt and pepper and cook about 2 more minutes.
- Add the turkey and cook, breaking the meat apart into small pieces with a wooden spoon, for about 10 minutes or until meat turns white.
- Add ketchup, tomato sauce, Worcestershire sauce, vinegar, brown sugar and thyme and mix together well.
- Bring mixture to a boil, reduce heat and simmer for 20 minutes. remove from heat.
- Cut buns in half, lightly toast and pile with sloppy joe mixture.
