It’s Friday! Treat yourself. Even though blondes are the less popular cousin of the brownie, I actually prefer them. Not as rich and just as tasty, blondies have always been a favorite of mine. These super easy, delicious chocolate chip blondies are the perfect splurge. Not only are they gluten-free, they don’t have that much sugar or any refined ingredients. A sweet treat you don’t have to feel too guilty about! Serve warm with a glass of milk, of course.
- 3 cups almond meal/flour
- 1 tsp baking soda
- ½ tsp sea salt
- ¼ cup coconut oil
- ¼ cup maple syrup
- 1 whole egg
- 2 egg whites
- 1 tsp vanilla
- 1 cup chocolate chips
- Pre-heat oven to 375.
- Line a 8 by 12 baking dish with parchment paper.
- Combine almond meal, baking soda and salt in medium mixing bowl.
- Cream coconut oil and syrup together in a mixer for about 5 minutes. Add egg and egg whites and vanilla and mix about 2 minutes more. Scrape down sides of bowl and mix one more minute.
- Slowly add dry ingredients into the wet mixture and mix for another minute.
- Add chocolate chips and mix until combined.
- Pour mixture into pan and spread evenly, smoothing out top.
- Put in oven and bake for 20-25 minutes, until top is golden brown and middle is set.
- Remove from pan, let cool and then cut into squares.
