There is a pretty well-known restaurant chain in the Bay Area called Original Joes. My grand-mother used to take me there as a kid and without fail, I would always order the Joe’s Special. This was their signature dish and it consisted of ground beef, onions, mushrooms and spinach and I preceded to smother it in catsup (as my grand-mother called it.) So, I recreated a healthier version of this childhood favorite and it is now a staple in our household. It is definitely my go-to when the hubby is on a business trip or I am going out. Its easy, healthy and the boys love it! I usually serve with roasted sweet potatoes and of course, lots of catsup. Enjoy!
- 1 pound ground turkey
- 1 yellow onion, chopped
- 1 cup steamed spinach
- 1 cup sliced mushrooms (cremini or brown), optional
- 4 eggs, lightly scrambled
- 2 Tbsp olive oil or butter
- 1 tbsp salt
- fresh ground pepper
- Wash the spinach and put it in a pot with ¼ cup water. Cover pot and steam over medium low heat for about 10 minutes. Drain in colander, squeezing out extra water. Place on cutting board and roughly chop.
- Heat olive oil or butter in large skillet over medium heat. Add onion and sauté until soft, about 10 minutes. Add sliced mushrooms, if using, and sauté another 10 minutes. Add turkey and cook, breaking the meat apart with a wooden spoon. Cook until meat is cooked through, about 10 more minutes.
- Push the meat mixture to the side of the skillet and pour in the eggs on the other side. Lightly scramble the eggs on one side. Once cooked, gently incorporate the eggs and the spinach into the turkey mixture.
- Season with salt and pepper and adjust if neccessary
