Herb Marinated Steak

Serves: 8 servings
Ingredients
- 1 cup fresh basil leaves
- 3 scallions, white and light green parts, thinly sliced
- 2 tablespoons fresh thyme leaves
- 2 tablespoons fresh chopped mint leaves
- 2 garlic cloves
- 2 teaspoons salt
- zest of 1 lemon
- juice of ½ lemon
- ¼ cup olive oil
- 2½ pounds boneless steak (ribeye, NY or skirt)
Instructions
- In a blender or food processor, combine basil, scallions, thyme, mint, garlic, salt, lemon zest, and lemon juice. Pour in the olive oil and blend into a paste.
- Pat the steak dry with paper towels and place in a large bowl or baking dish. Slather marinade all over meat, cover the bowl and refrigerate for at least 30 minutes and no longer than 12 hours.
- When ready to cook, heat a grill or broiler to high.
- Grull or broil the meat until it is nicely browned on both sides and pink in the middle, about 4-5 minutes each side. Transfer to a cutting board and let rest for 10 minutes.
- Slice steak widthwise and serve immediately.
