I am always super surprised by how long the strawberry season lasts. We are already halfway through October and they were all over the farmer’s market yesterday. You are going to love this easy, colorful and refreshing salad. Baby spinach with sweet strawberries crunchy almonds and creamy feta is a heavenly combo. Enjoy!
Spinach Salad with Strawberries, Feta and Almonds

Serves: 4-6
Ingredients
- 4 cups baby spinach
- ½ cup slivered almonds, toasted
- ½ cup crumbled feta
- 10 strawberries, trimmed and thinly sliced
- Dressing:
- ⅓ cup white wine vinegar
- 2 tablespoons honey
- 1 tablespoon dijon mustard
- ½ teaspoon salt
- fresh ground pepper
- ⅔ cup olive oil
Instructions
- Place spinach, feta, and strawberries in a large salad bowl.
- Lightly toast almonds in a skillet over medium heat, stirring often, Remove and let cool.
- Place all dressing ingredients in a bowl and whisk or shake vigorously in a jar with a tight-fitting lid.
- Pour your desired amount of dressing over salad and toss well.
- Sprinkle with toasted almonds and serve.
