Coconut Curry Shrimp
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons coconut oil
- 2 teaspoons garam masala
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1 teaspoon tamarind paste
- ½ cup coconut paste
- 2 tablespoons fresh cilantro
Instructions
- Combine masala, curry powder, tamarind paste, and salt in a medium bowl. Add shrimp and toss well. Cover and refrigerate for 1-2 hours.
- Heat oil in a large skillet over medium-high heat. Add shrimp in a single layer, reserving marinade. Sear shrimp 1-2 minutes, per side.
- Add coconut milk and reserved marinade and stir well. Cook about 3 more minutes, until sauce is thick and shrimp are cooked.
- Garnish with cilantro and serve immidiately.
