These turkey burgers are divine! Moist and juicy, they are busting with all the fabulous fall flavors. The sweeteness of the apple and sage pairs amazingly with the sharpness of the cheddar and then you add the crunch of the celery and its perfection! Serve with Dijon mustard, with or without a bun. I like to eat mine wrapped in lettuce leaves. Enjoy!
- 1 pound ground turkey breast
- 2 tbsp olive oil
- 2 shallots, minced
- 2 celery ribs, diced
- 3 tbsp chopped parsley
- 3 sage leaves, chopped finely
- 1 apple, peeled and grated (any variety, I like macintosh)
- ½ tsp salt
- fresh ground pepper
- sharp cheddar cheese (I like cabbot)
- dijon mustard
- 6 hamburger buns (optional)
- Heat 1 tbsp olive oil in a large pan over medium heat. Saute shallots, celery, sage, and apple until soft, about 5-10 minute. Add parsley, salt, and pepper and mix well. Turn off heat and let cool.
- Put turkey meat in a medium bowl. Add cooled apple mixture and mix well with wooden spoon.
- Using damp hands. form turkey meat into 6 equal sized patties.
- Oil a grill or pan and put over medium heat. Add turkey patties and cook 5-6 minutes on one side. Flip, add a slice of cheese and cook for another 5-6 minutes.
- Serve on a warm bun or plain with dijon mustard.
- 4-5 medium sweet potatoes, peeled and cut into 1 inch slices (when buying I try to get ones that are about the same size)
- ¼ cup oil (I use a vegetable/ coconut blend)
- 1½ tsp Omnivore Salt and spice mixture by Angelo Garro
- Preheat oven to 425 degrees.
- Put sweet potato slices in a bowl with oil and salt and coat well.
- Arrange on baking sheet in a single layer with as little overlap as possible.
- Roast in the oven for 20 minutes. Flip fries over and rotate pan and roast another 20 minutes.
- Remove from oven and serve hot.
