The pictures do not do these guys justice. Even though they aren’t the prettiest, these frittata “muffins” are absolutely delicious. Moist and airy, they are the perfect, easy single-serving breakfast. Huge hit this morning in our house!
In a medium bowl, whisk together eggs, milk, cheese, butter, bacon, spinach (if using, not pictured), salt and pepper.
Using a measuring cup poor mixture into each muffin cup and bake for 25-30 minutes at 350.
- 8 eggs
- 1 cup milk
- 2 tablespoons melted butter
- 5 bacon strips, cooked and crumbled
- 1 cup grated cheddar cheese (you can also use feta, mozzarella)
- 1 cup baby spinach (optional)
- ½ teaspoon salt
- ¼ teaspoon fresh ground pepper
- Pre-heat oven to 350.
- Grease a muffin pan well and set aside.
- In a medium bowl, whisk together eggs, milk, cheese, butter, bacon, spinach (if using), salt and pepper.
- Using a measuring cup poor mixture into each muffin cup until it is about ¾ full.
- Bake for 20-30 minutes or until center is set.
