I love the week between Christmas and New Years. The rush and craziness of parties and presents is over, work slows down and days can be spent relaxing at home with friends and family. With nowhere to go and nothing to do, this is an optimal time to get cooking. Our family usually goes up to the snow during this week. While the boys go off to ski school, I am more than happy to stay inside and cook up a storm. Nothing suits these lazy, cozy days more than Sloppy Joes. Comforting, filling and warming, this easy recipe will sure to be a family favorite. Turkey meat can easily be substituted for ground beef and you can make it well in advance in heat up. Enjoy!
- 1 Tbsp olive oil
- ½ cup minced carrots, about 2 carrots
- 1 cup finely chopped onion (about 1 medium onion)
- ½ cup finely chopped celery, about 2 stalks
- 2 cloves garlic, minced
- ½ teaspoon salt
- fresh ground pepper
- 1¼ lb ground turkey
- ½ cup ketchup
- 1-15 ounce can tomato puree
- 1 Tbsp Worcestershire sauce
- 1 Tbsp red wine vinegar
- 2 Tbsp brown sugar
- ½ teaspoon dried thyme
- 4 hamburger buns
- Heat oil in a large cast iron skillet over medium heat.
- Add the onions, carrots, and celery and saute until soft, about 6 minutes.
- Add the garlic, salt and pepper and cook about 2 more minutes.
- Add the turkey and cook, breaking the meat apart into small pieces with a wooden spoon, for about 10 minutes or until meat turns white.
- Add ketchup, tomato sauce, Worcestershire sauce, vinegar, brown sugar and thyme and mix together well.
- Bring mixture to a boil, reduce heat and simmer for 20 minutes. remove from heat.
- Cut buns in half, lightly toast and pile with sloppy joe mixture.
