The kids love parfait day. I think it is mostly because they get to eat out of fancy cups, but they always get super excited and eat every bite. And, I love parfait day too! It is simple and doesn’t require any cooking. You can use virtually any yogurt, any granola and any fruit. Personally, I like Noosa Yogurt, Flour Craft Granola and any seasonal fruit. I actually got all this fruit at the farmers market over the weekend. Presentation is everything. Make sure to use a clear drinking class that is good for layering. Stemless wine glasses are perfect. You simply put a layer of yogurt, then fruit, and then granola until the glass is full and then top with yogurt. Enjoy!
- Any seasonal fruit
- 1 cup yogurt of your choice
- ¾ cup granola of your choice
- Chop fruit into bite-sized pieces and mix in a small bowl.
- Using a clear drinking glass (stem-less wine glasses are best), put a layer of yogurt (about ⅓ cup) a layer of fruit (1/3 cup) and then a layer of granola (3 Tablespoons). Repeat until glass is full and then top with yogurt.
