There is a little vegan cafe called Nourish in our neighborhood. For awhile, they had a dragon fruit smoothie special. I tried it one day and within two minutes, my oldest son, Leo, hijacked it and quickly became obsessed. We had to go there daily until the special ended. Which was actually a real bummer because it worked like a charm with bribary. When I saw dragon fruit in the market yesterday, I quickly put three in my cart, until I noticed that they were $14 a pound. So, I stuck with one and was super excited to show Leo. This morning, we made our first dragon fruit smoothie. I actually have never used a dragon fruit before and it is such an amazing fruit. It is an exotic cactus fruit that has a delicately sweet and mildly acidic flavor. The inside of the dragon fruit ranges from white to pink to an insane magenta color. All types have tiny, edible black seeds (very similar to those found inside Kiwi) that are full of essential fatty acids. This extremely nutritious exotic superfood is full of phytonutrients, antioxidants, vitamin C, and B vitamins.
- 1 dragon fruit, cut into quarters and peeled
- ½ cup coconut water
- 1 banana
- 1 handful of ice
- Put all ingredients in high powered blender and mix well.
