Mexican Brown Rice
Ingredients
- 1 cup brown rice
- 1 tbsp butter or olive oil
- ½ yellow onion, minced
- 2 cups water or broth
- ½ tsp cumin
- ½ tsp chili powder
- ½ tsp salt
- 1 tbsp tomato paste
Instructions
- Rinse rice well in a strainer.
- Heat oil or butter in a pot over medium heat. Add cumin and chili powder and let bubble for a minute.
- Add onion and cook until soft, about 5 minutes.
- Add rice and coat well.
- Add water or broth and tomato paste and bring to a boil.
- Reduce heat to a simmer, cover and cook for 40 minutes, until all the liquid is absorbed and rice is cooked.
