This yummy, easy dish is a staple in our house. Inspired by my sister-in-law, it is a great weeknight go to that everyone is happy with. The kids love choosing their own toppings and drenching with soy sauce. Enjoy!
Ingredients:
- 4 chicken breast (boneless, with skin on)
- 1/2 cup “soyvay” or any other teriyaki sauce
- 1 pound brocoli
- 1/2 cup peanuts
- 4 scallions
- cilantro
- 2 carrots
- 2 cups brown rice
Directions:
Place chicken breast in ziplock bag with teriyaki sauce. coat chicken and place bag in refrigerator for 3-4 hours.
Preheat oven to 375.
Lightly steam broccoli, chop scallions and cilantro, and peel and cut carrots into matchsticks (I use microplane slicer with julienne blade).
Cook brown rice.
Bake chicken for 20 minutes until cooked through. once cooled, chop breasts into bite size pieces.
Fill a bowl with rice, chicken, broccoli and toppings of your choice. Serve with soy sauce.
